Learn How to Make Ravioli From Scratch

Understanding Ravioli Basics and Ingredients

Ravioli is an Italian pasta formed by placing a filling between two thin sheets of dough and sealing the edges. The word "ravioli" comes from the Ligurian region of Italy, where it has been made for centuries. Each piece typically measures about 2-3 inches square or circular, depending on regional tradition and personal preference. The exterior dough serves as an edible container, while the filling provides flavor and texture contrast.

The basic ingredients for homemade ravioli are straightforward and likely already in your kitchen. For the pasta dough, you need all-purpose flour, eggs, salt, and olive oil. A standard recipe uses 2 cups of flour and 3 large eggs to create enough dough for approximately 24-30 ravioli pieces. The filling traditionally combines ricotta cheese, Parmesan cheese, eggs, salt, and pepper, though variations exist throughout Italy and beyond. Some regions add spinach, herbs like basil or parsley, or minced meat to their fillings.

The quality of ingredients affects the final result. Fresh eggs produce a richer dough with better binding properties than older eggs. Full-fat ricotta creates a creamier filling than low-fat varieties. Whole milk mozzarella can be added for extra richness, though it is optional. Imported Parmigiano-Reggiano offers more complex flavor than domestic Parmesan, but domestic versions work adequately for beginners.

Traditional Italian ravioli recipes use a ratio of approximately 100 grams of flour per egg. This translates to roughly 3/4 cup of flour per large egg. The dough should be firm enough to hold its shape but soft enough to knead without excessive effort. Understanding these proportions helps when scaling recipes up or down based on how many servings you need to prepare.

Practical takeaway: Gather all ingredients before beginning. Room-temperature eggs incorporate into flour more smoothly than cold eggs. Measure flour by weight using a kitchen scale when possible, as this produces more consistent results than volume measurements.

Making Pasta Dough by Hand and Machine

Creating pasta dough requires mixing flour and eggs until they form a cohesive mass. The traditional method involves making a mound of flour on a clean work surface, creating a well in the center, and cracking eggs into that well. Using a fork, beat the eggs gently, then gradually incorporate flour from the inner walls of the well. This method gives you direct control over hydration and requires about 10-15 minutes of mixing and kneading by hand.

Start by whisking the eggs with a pinch of salt in the flour well. As the mixture thickens, use your hands to incorporate more flour from the surrounding mound. Once a shaggy dough forms, begin kneading by pushing the dough away from you with the heel of your hand, folding it back over itself, rotating it, and repeating. The dough should become smooth and elastic after 8-10 minutes of continuous kneading. If it feels too sticky, dust with additional flour. If it feels too dry and cracks form, wet your hands slightly and continue kneading.

Food processors offer a faster alternative to hand-kneading. Add flour and salt to the processor bowl, then pulse briefly to combine. While the processor runs, drizzle eggs through the feed tube until the mixture forms a ball. Process for about 30 seconds more until the dough becomes smooth. Remove the dough and knead by hand for just 2-3 minutes to ensure proper gluten development. This method typically takes 5-7 minutes total.

Stand mixers with dough hooks provide another option. Place flour and salt in the mixer bowl, then add eggs with the mixer on low speed. Once combined, increase speed to medium and mix for approximately 5-8 minutes until the dough becomes smooth and pulls away from the bowl sides. The dough should be slightly sticky to the touch but not wet enough to stick to your hands when pressed gently.

Regardless of which method you choose, the finished dough requires resting. Wrap it in plastic wrap or cover it with an inverted bowl and let it rest at room temperature for 30 minutes to 2 hours. This resting period allows gluten to relax, making the dough easier to roll out without it constantly shrinking back.

Practical takeaway: Kneading develops gluten, which gives pasta its characteristic texture. Properly kneaded dough should be smooth, elastic, and spring back when poked. If you have a pasta machine, you are more likely to achieve consistent thickness than with a rolling pin, though both methods work.

Rolling and Shaping Your Dough

Rolling pasta dough requires patience and technique. After the resting period, divide the dough into 4-6 equal portions. Work with one portion at a time, keeping the others covered to prevent drying. On a lightly floured surface, flatten the portion into a disc using your hands, then begin rolling with a rolling pin in one direction. Rotate the dough 90 degrees, flour lightly if needed, and roll again. Continue this process until the dough reaches approximately 1/16-inch thickness, which is thin enough to see your hand through it.

Pasta machines streamline this process significantly. Set your machine to the widest setting and feed the dough through, then fold it in half and feed it through again. Repeat 4-6 times, which develops the gluten further. After folding, set the machine to the next thinner setting and feed the dough through once without folding. Continue advancing to thinner settings with each pass until you reach the final setting. Most machines have 6-8 thickness settings. The finished sheet should be thin and pliable but not torn.

If the dough becomes sticky during rolling, dust it lightly with flour. If it becomes dry and cracks appear at the edges, cover it with a damp towel for 2-3 minutes to allow moisture to redistribute. The goal is dough that is thin and uniform without dry, brittle areas or wet, overly sticky spots.

For shaping individual ravioli, lay one sheet of dough on a clean surface and brush it lightly with a mixture of egg and water. This egg wash helps seal the ravioli. Place small mounds of filling (approximately 1 teaspoon each) in rows about 2 inches apart. Lay a second sheet of dough over the filling, then use a ravioli maker, cookie cutter, or knife to cut and seal between the filling mounds. Press firmly around each filling mound to eliminate air pockets and ensure a good seal.

If you lack a ravioli maker, use a 3-inch round or square cutter or cut squares freehand with a knife. The key is pressing the edges firmly to seal them. Any air pockets left inside will cause the ravioli to burst during cooking. Check each piece by pressing gently on the sealed edges to confirm they hold.

Practical takeaway: Place filled ravioli on a parchment paper-lined baking sheet, spacing them so they do not touch. Refrigerate for at least 30 minutes before cooking. Chilled ravioli hold together better and cook more evenly than room-temperature ravioli.

Preparing and Cooking Ravioli Properly

Cooking ravioli differs from cooking other pasta shapes. Unlike spaghetti or penne, ravioli are delicate and contain liquid filling. Bringing a large pot of salted water to a rolling boil is the first step. Use approximately 4-6 quarts of water for each pound of ravioli, which provides enough space for the ravioli to move freely without sticking together. The water should taste like sea salt—a common guideline is adding 1 tablespoon of salt per gallon of water.

Fresh ravioli cook much faster than dried ravioli. Fresh ravioli typically cook in 3-5 minutes, while dried ravioli require 4-6 minutes. The ravioli are done when they float to the surface and remain there for approximately 30 seconds. This floating indicates they have heated through. Cooking times vary based on ravioli size and thickness, so begin checking around the 3-minute mark for fresh ravioli.

Using a slotted spoon or spider strainer, gently remove cooked ravioli from the water and transfer them
